Delhi style Kulche

Ingredients:

2 cups- All purpose flour
Salt as per taste
1 tsp- Baking powder
1/2 tsp- Baking soda
1 tsp- Sugar
1/4 cup- Yoghurt
3 tbsp- Oil
Warm water
1 tbsp- Butter
Coriander leaves


Method:

Take all purpose flour in a bowl,add salt, baking powder, baking soda and sugar to it.
Mix all these dry ingredients well.
Now add Yoghurt and oil to it.
Mix this well.
Add warm water in small amounts at a time to kneed the dough.
The dough should be soft.
Now apply some more oil on the dough and cover it.
Now let this rest for 1 hour.
After 1 hour, take the dough and kneed it again.
The dough becomes very soft and stretchy.
Divide the dough into equal sized balls.
You can make 6-7 balls with this dough.
Take a dough ball and cover the others while you roll this.
Using oil roll the dough ball into oval or circle shape.
Avoid using dry flour while rolling as it makes the kulcha dry.
You can also add sesame seeds on it.
Now turn the kulcha and apply water to the bottom side of the kulcha carefully.
Heat a pan on low flame and place the kulcha with wet side on the pan.
Sprinkle some water on the side of the pan so that its vapour help in cooking the kulcha.
Now cover the pan with a lid and cook it on low flame for 1-2 mins on each side
You can see the fluffy bread after 2 mins.
Now turn the kulcha and cook the other side for 1-2 mins on low flame.
Cook on both the sides and keep it aside.
Repeat the process for remaining dough balls.

While serving:
Melt 1 tbsp butter on the pan and put some coriander on it.
Now place the kulcha on the pan and cooks its each side for 1-2 mins each.
Serve hot with Punjabi Chole.
Enjoy!

Note:
You can store the kulchas for about 2-3 days in air tight container/bag.
And apply butter and coriander to it while serving.
