Vada Pav



Ingredients:
For making coating:
1/2 cup- Besan /gram flour
1 tbsp- Rice flour
Turmeric powder
Salt - as per your taste
A pinch- Baking soda
Water

For making stuffing:
1 tbsp- Oil
1/2 tsp- Mustard seeds
A pinch- Asafoetida
6-8- Curry leaves
Chilli and garlic paste (5-6 garlic cloves and 2-3 green chilies)
Turmeric powder
2- Potatoes(boiled,peeled,mashed)
Salt to taste
1/2 tsp- Lemon Juice
Finely chopped Coriander leaves

For making vada:
Oil for frying

For making Chutney:
2 cloves- Garlic
1 tbsp- Red chili powder
Salt to taste

Method:

For making coating:
In a bowl, take besan.
Add rice flour and turmeric powder, salt and baking soda. 
Mix well and add water to it.
Prepare the batter with medium consistency.
See to it that no lumps should be formed.

For making stuffing:
Heat the pan and add oil.
Add mustard seeds to it.
Add asafoetida, curry leaves and chili garlic paste and mix it well. 
Now fry this for a minute.
Turn off the heat and add turmeric powder to it.
Let this cook for a minute and then add boiled potatoes.
Add salt,as per  your taste and lemon juice ,coriander leaves. 
Mix  this well.
Now take some stuffing and roll it in the shape of a vada.

For making vada:
Heat oil on medium heat.
Mix the prepared batter once again nicely.
Dip the vada in the batter.
Let the batter coat the vada completely from all the sides.
Fry this coated vada in the oil until it turns slightly red.
Once done, remove the vada from oil.

For making chutney:
Add the remaining batter into the hot oil and fry until it turns crispy.
Take it out on a tissue paper so the excess oil is removed.
Transfer this into a blender pot and add garlic cloves, red chili powder and salt to it.
Blend this into a powder.

Note:
While serving, apply tamarind chutney or green chutney to the sides of the bread.
