Homemade Banana pancake



Ingredients:

2 large or 3 medium banana
1/2 cup grated Jaggery
Cardamom powder
1 cup Rice flour Or 1/2 cup wheat flour & 1/2 cup all purpose flour (maida)
Chopped Almonds and cashews
1 and half cup Water/Milk
1/2 cup grated coconut
Honey or maple syrup
1/2 tsp baking powder (Optional just to make it extra fluffy and light)

Method:

Get the Jaggery and water in a pan. Melt it. Till jaggery is melting take banana, peel it and mash.
Once the Jaggery has dissolved , turn off the heat. Keep it aside for cooling.
In the mashed banana add rice flour, grated coconut, cardamon powder. Mix it well.
Now add melted Jaggery water in this mixture to make a thick batter.Stir it nicely so that everything will get mixed properly.
Now take a pan, heat it.
Once it is hot enough put ghee/oil in the Pan, then take batter and put it in the centre and spread it evenly in the circle shape. Cook it for around 1 to 2 minutes on low flame only. 
Add little ghee/oil on upper side of the pancake and then turn/flip it. Cook the other side of the pancake again for one to two minutes.
Repeate the same process for the remaining batter.
Now arrange the pancakes in plate. Top it with some banana slices , chopped almonds and cashews, sprinkle some chopped Jaggery on top (it's optional), lastly drizzle some honey as pan cakes are not complete without honey or maple syrup. 

Note:

To make this, ripe or over ripe bananas are perfect.
Cook it on low flame only.
You can use wheet flour and Maida instead of Rice flour. I tried to make just healthy version of it so children can eat it anyday, anytime.
We can use candied fruits also along with nuts.
