Puran Poli


Ingredients:

Dough:
1 & 1/2 cup Wheat flour
1/2 Cup Maida/All purpose flour
Pinch of Turmeric (Optional)
Salt
Oil
Ghee
Water

Puran:
1 Cup Chana dal
1 Cup Jaggery
Pinch of cardamom powder
Nut meg powder
Oil
Water

Method:

Dough:
Ina bowl, take both flour, add salt and turmeric. Mix everything well.
Add a little water and knead a dough.
Dough should not be hard.
Keep the dough aside for around 20-30 minutes to rest.

Puran:

Wash the chana dal and take it in pressure cooker.
Add some water and then 1/2 tsp oil.
Close the lid and cook the chana dal for around 5 whistles.
Once pressure cooker is cool down, open the lid and strain the water from dal.

Don't throw that water, we will need it to make katachi Amati.
In a pan, add ghee and dal mix it. Add jaggery, mix everything well.

Cook it till this mixture becomes thick.
You can check the perfect consistency.
Put your spatula or spoon in the middle if it stays at the same position your puran is cooked perfectly.

Add some cardamom and nut meg powder.
Turn off the flame.
Put this in puran machine and grind it or you can use mixer as well.
Your puran is ready.

Puran Poli:

Get the dough, knead it again
Make small portion or balls of the dough.
Make small katori from dough. While making it keep its corner or egdes thin and center little thick.

Stuff the puran in it and close all the corners to the top.
Remove the access part of the dough.

Dip the dough in dry flour and roll the poli.

Make sure puran will not come out.
Simultaneously, heat a pan to roaste the puran poli.
Put rolled poli on pan and when you see the small bubbles then flip the poli. Cook it from other side as well.


Apply some ghee and roast it for few seconds from both sides.
Remove the poli on plate.

Put some ghee on poli while serving and enjoy it with katachi Amati
