Pani Puri


Ingredients:

Nylon sev for garnishing
Black chana soaked and boiled.
Chopped onion. 

Puri:

1 Cup sooji
2 tsp Maida
2-3 tsp oil
Warm water


Spicy water:

1/2 cup Mint leaves
1 Cup coriander leaves
Ginger
1-2 Green chilli (As per your taste)
1/2 tsp Chaat Masala
1 tsp Cumin powder
1/2 tsp Black salt
3-4 Cups chilled water
Salted boondi


Khatta and metha pani

1 Cup tamarind extract or 1 & 1/2 Cup tamarind
1 Cup Jaggery
1 tsp Cumin powder
1/2 tsp Red chilli powder
1/2 tsp Chat Masala
Black salt
3 cups chilled water 
Salted boondi 

Potato feeling

3 boiled and smashed potato
Half finely chopped onion ( Optional )
Coriander finely chopped
Coriander Powder
Chat Masala
Red chilli Powder
Black salt 
Normal salt

Or

Ragda Filling

1 Cup white peas or Vatana (Soaked)
Turmeric
Cumin Powder
Coriander Powder
Asafoetida
Salt
Oil

Method:

Puri:

Take the Sooji, maida and salt, mix it well.
Add water and knead it into a soft dough for 5 minutes.
Cover the dough with wet cloth and keep it aside to rest for around 30 to 40 minutes.
After 30-40 minutes, roll out the dough and cut it with help of small round cutter or any small bowl or steel glass.
In a pan, add oil and heat it for frying puri.
Once it is hot enough, add the puri into it and deep fry till it turns golden.


Tikha Pani:

In the mixing jar, take mint leaves, coriander, ginger, green chilli and salt.
Blend this mixture into a fine paste.
Take this mixture in bowland Add water,mix it.
Add Cumin Powder,Chat Masala.
Before serving add salted boondi in this tikha Pani.
Check the taste and if required add more salt.

Khatta and Metha Pani:

Method 1

In a bowl, take tamarind extract.
Add 3 tsp Jaggery, cumin powder, red chilli powder, chat masala, black salt and mix it well.
Add chilled water and mix everything nicely.

Before serving pani puri add salted boondi to the tikha and khatta metha Pani.

While serving , take one puri and break it at the centre.
Add potato or ragda filling as per your requirement, you can also add boiled moong or black chana, add tikha Pani, meetha pani and a little nylon sev.

Your delicious chatpata pani puri is ready, Enjoy !!


Note:

I have given receipe for potato filling and ragda filling as well.You can use any filling for pani puri, as per your liking.
 While filling the puri with potato filling you can add some boiled chana or moong sprout and onion.

If you don't want to prepare two separate Pani for pani puri, you can prepare only one pani - tikha and khatta pani
Grind the 2 cups Mint leaves, 1 cup coriander leaves, 1 inch ginger,2-3 green chilli to the smooth paste.
Take it I bowl and add water to it.
Add normal salt, black salt, cumin powder and chat masala mix it. Strain this water. Add tamrind pulp to this water and mix it.
Check the taste if required add more pulp or chat masala or if require more spice add some chilli powder.
Add salted boondi before serving.
