Punjabi Chole



Ingredients:

1 Cup chole or cheakpea (Soaked)
3 Onions finely chopped
2 Tomato finely chopped/Puree
2-3 Green chillies ( As per your taste)
2 Dry red chilli
1 inch Ginger crushed or finely chopped
5-6 garlic cloves crushed or finely chopped
1 cinnamon stick
1 Star Anise
1 black cardamom
1 or 2 bay leaves
Cumin seeds
Carrom seeds or Ajwain
1 tsp Tea leaves/powder
Turmeric
1 tsp Red chilli powder
1 tsp coriander powder
1/2 cumin powder
1 tsp garam masala powder
1 tap chole Masala
1/4 tsp Kasuri methi
asuri methi
1/2 tsp Amchoor powder or dry mango Powder
Salt
Ghee
Water

Method:

Wash the soaked chole and add it in the pressure cooker with the water. Add around 2 cups of water. 
Now take one small cloth to make small potali of tea leaves, cinnamon, bay leave, cardamom, Star Anise.
Add this potali in the pressure cooker. Add salt and carrom seeds.
Boiled the chole for around 4-5 whistles on medium flame.

Once pressure cooker is cool down, remove the potali and drain the water from the boiled chole.
Keep this water aside as we will need that water for our gravy.

Gravy:

In a pan add heat ghee.
Add black cardamom, bay leave, dry red chilli, let it splutter.
Now add cumin seeds and stir well.
After that add ginger and garlic saute it nicely till the raw flavour of the ginger goes.
Add finely chopped onions and saute it till it becomes golden brown.
Add turmeric powder, coriander powder, cumin powder, red chilli powder and chole Masala.
Mix it and cook it on low flame for around a minute.
Now add chopped tomatoes or puree and 
Mix it then add salt, amchoor powder.
Cook the mixture till tomatoes becomes soft.
Cook the all masala properly, it enhance the taste of chole.

Now add the boiled chole. Stir it and cook the chole with masala for around 3 minutes.

Add water of boiled chole (we have kept it aside).
Add garam masala powder, green chili,crushed kasuri methi and mix it.

You can adjust the consistency of the gravy using the boiled chole water.
Cook the chole on medium low flame for around 10 minutes.

Your delicious chole are ready. Garnish it with fresh coriander leaves, if you want you can add thin slices of ginger also.
Serve it with bhatura or kulcha or jeera rice along with lemon and onion. Enjoy!!

Note:
While boiling the chole, you can add pinch of baking soda.
