Katori Chat


Ingredients

2 Cups Maida
Hot oil 2 tsp
Salt
Carrom seeds/Ajwain
3/4 th cup warm water
Oil for frying

For filling of katori

1 boiled and chopped potato
1 Cup soaked and boiled chole/Chickpea
1 Cup soaked and boiled Black chana or Moong Sprouts
Finely chopped onion
Finely chopped tomato (Optional)
Cumin Powder 
Chat Masala
Sweet Curd

For garnishing

Fresh coriander
Nylon sev
Alu bhujiya sev (Optional)
Pomegranate
Masala peanuts (Optional)

Method:

Katori

Take the maida, add salt and hot oil, mix it.
Add warm water and knead into dough. Let it rest for 20-30 minutes

Take small portion of the dough and roll the chapati or roti. Don't roll it too thin.
Prick the rolled dough or roti with the fork, so while frying the katori it will not get puffed up.

Take small bowl, stick the roti to all sides of the bowl so the dough will hold the shape of bowl. Stick it properly.

Now cut off the excess part of the dough from top side of the bowl with the knife.
Simultaneously, Add oil in frying pan. Once oil is hot enough put that tokari or bowl in the oil and deep fry it.
As you keeps frying tokari bowl will separately slowly.

Once it separately completely, remove the bowl from the frying pan slowly and carefully.
Fry the tokari on low flame till it turns golden brown.
Remove it on the oil absorbent paper.

Filling method 1

When tokari cools down, Add boiled chole, chopped potato, 1 tsp moong sprout or boiled Black chana, finely chopped onion and tomato.
Sprinkle some chat Masala, Red chilli powder or you can add finely chopped green chilli.
Add 1 tsp tamarind chutney, mint chutney and sweet curd on top of it.
Sprinkle some, chat Masala, Cumin powder, red chilli powder. 
If you want add more mint or tamarind chutney.
Garnish it with nylon sev, pomogranate, Masala Peanuts and Fresh coriander.
Your delicious katori chat is ready, Enjoy !

Method 2:

You can take chana,moong,potato in one bowl and mix it with red chilli powder or chopped green chilli, cumin powder, chat masala.
Add this mixture in katori, add tamarind chutney, green chutney,sweet curd on top of it.
Then add chopped onion,tomato, nylon sev, pomogranate, and masala Peanuts.
