Khasta Moong Dal Kachori

Kachori






Ingredients:
1/2 cup moong dal (Soaked)
6 tsp Besan/ Gram flour
1/2 tsp Black Salt
1/4 Turmeric Powder
1 tsp Red chilli powder
1 tsp Amchoor Powder
1 tsp Fenel/Saunf roughly crushed
1tsp Cumin seeds roughly crushed
2 tsp Coriander Seeds roughly crushed
1/4 tsp Black Papper Powder
1/2 tsp Garam Masala
1 tsp Coriander Powder
1 tsp Kasuri Methi
1 inch ginger Grated
2-3 Green chilli crushed
1 tsp Sugar 
Oil/Ghee for frying
1 and 1/2 cup All purpose flour or Maida
2 tsp Ghee
Salt
Carrom seeds/Ajwain
Water 

Method :

Dough:

 In a bowl, take Maida. Add salt, ghee, carrom seeds and mix it well.
Now add water gradually and make the dough.
Knead the dough, it should not be too soft or too hard.
Cover the dough and keep it aside for around 30 minutes.

Kachori stuffing:

Rinse a moong dal nicely and soak it for 2-3 hours.
After 2-3 hours drain the water from soaked dal and add the dal in grinder.

Grind it roughly.Don't make a smooth paste.
In a pan take oil, add crushed cumin, fennel and coriander seeds.Saute it.
Add crushed green chilli and ginger. Mix it.Saute it for around 1 minute.

Add all spices - red chilli powder, turmeric, garam masala, kasuri Methi, black paper powder,amchoor powder,black salt, normal salt as per taste. Mix it and saute it.
Add besan, stir and cook it for 2 minutes so raw flavour of besan will go.
Add moong dal, mix it well with the masala and cook it for 3-4 minutes.
Add sugar, saute it over low flame.

Taste the mixture if required add more spices as per your taste and mix it.
Turn off the heat and keep the filling aside to cool down.
After filling cools down,take the portions of the filling and make the small balls or you can use this filling directly without making this balls.
Take the dough and knead it again.
Cut the dough in equal portion. 

Get one portion and start flattening it with your fingers.Keep the edges thin.
Now place the mixture/filling ball in the centre. Get the edges of the dough together to the top and join them.

Excess dough can be removed.
Flatten the kachori.Place it between your palm and just press it.


Don't keep the dough too thick or thin. It should be medium.
You can make kachori in any size as per your requirement.
Take the oil/ghee in the frying pan,add oil/kachori.
Oil should not be too hot.
Then add kachori in it.Deep fry the kachori untill they are golden.
Serve your delicious kachori with chutney. Enjoy !
