Sevayi Kheer


Ingredients:

1 ltr Milk
1 cup vermicelli/sevayi
Sugar
Almonds
Cashews
Raisin/ Kishmish
Pistachio chopped
Chironji
Saffron/Kesar
Cardamom powder
2 tsp ghee

Method:

Get the milk and let it boil.

In a pan add ghee. Add chopped almonds and roast/saute it. Take it out.

In the same pan add vermicelli in the hot ghee and roast it till it turns golden brown.
Once milk is boiled, add roasted sevayi and let it cook till milk reduces to half of its quantity and sevayi puffs up/cook nicely.It will take around 8-10 minutes.
keep stirring after every 2 minutes.
Add cardamom powder, saffron and Sugar and let it cook for 4-5 minutes.
Add roasted almonds, cashews, raisins, pistachio and chironji. Cook it for few minutes.

Turn off the gas.
Take it out in bowl and garnish it with nuts and serve.
