Ragada Chat


Ingredients:

1 cup white pease or Vatana (Soaked)
3 Boiled potato
1 Finely chopped onion
1 Finely chopped Tomato (Optional)
Sweet curd
Nylon sev and Masala Peanuts
Coriander
Oil
Cumin seeds
1/2 tsp Red chilli powder
1/4 tsp Amchoor powder
1/4 tsp Asafoetida
1/4 tsp Turmeric
2 tsp Corn flour/Maida
2 tsp Green chilli chopped
1/2 tsp cumin powder
1/2 tsp oriander powder


Method:

Wash the soaked pease and add it in the pressure cooker. Add 2 cups water, turmeric and salt. Boil it for 4-5 whistles.
Take the boiled and mashed potatoes , add red chilli powder, Amchoor powder or chat masala, salt and cornflour or maida.
Mix everything well, take a small portion on your palm (greese your palm with oil) and give the shape of small tikki.

 Shallow fry all the tikki till it turns golden brown. Remove this fried tikki on oil absorbent paper.
For Ragada, once pressure cooker cools down. Open the lid and mash the pease gently.
In a pan heat oil and add Asafoetida, cumin seeds, saute it.
Add red chilli powder, garam masala, Coriander powder and then boiled pease or white Vatana. Mix it well. 

If Ragada is too thick add some water, adjust the consistency of the Ragada.
Now we will start with our platting.
Place 2-3 tikki. On top of it add our ragada, then sweet curd, mint chutney, tamarind chutney, onion, chopped green chilli, tomato, chat masala, cumin powder
Nylon sev, peanuts, fresh chopped coriander.
