Crispy puri



Ingredients:

1 cup Wheat flour/atta
Ghee/oil for frying
1 tsp Rava (Optional)
Carrom seeds (Optional)
Salt
Water

Method:

In a bowl, take atta. Add salt, ghee, carrom seeds and rava and mix it well.
Now add water gradually and make the dough.
Knead the dough, it should not be too soft or too hard.
Keep it aside for around 15 minutes.
Take the dough and again knead it.
Make small balls. Apply oil on rolling board and make the Puri's. It should be of medium thickness.

Heat a oil in pan to fry our Puri's.
Once oil is heated enough, slide the puri in the oil. After a second press it with a laddle, puri will puff up.

Flip the puri and fry the other side as well for few seconds.
Remove it on the oil absorbent paper.

Note:
After making the dough , don't keep it aside for long time else it will drink more oil while frying.
If you roll the Puri's too thin then it will not puff up.
Rava will make the Puri's crispy so if you want crispy Puri's then add rava else you can omit it.
You can check the right temperature of the frying oil by putting small piece of dough. It will rise immediately without getting brown/burnt.
