Medu Vada

Ingredients:

2 Cups Urad dal ( Soaked)
Cumin seeds
Curry leaves chopped
1 small onion ( Optional)
2 tsp fresh coconut finely cut
1-2 Green chillies finely chopped
Fresh coriander
Asafoetida
Black paper 
Salt
Water
Oil for frying


Method:

Wash the dal nicely for 2-3 times.
Soak the urad dal for at least 3 hours or over night.
Drain out the water and take the soaked dal in the grinding jar and make the smooth paste. Don't add do much water. Just 1-2 tsp water.
Take a paste into a bowl and beat it really good in one direction. You will need to beat it for around 10 minutes. After this you will see the change in color of the paste and also the batter will become light, fluffy and crispy.
After beating consistency will become like a whipped cream.
Now add cumin seeds, asafoetida, copped curry leaves, salt, black pepper, onion,small pieces of coconut. Mix all the ingredients nicely.
Heat a oil for frying the vada.
Wet your hand or palm with the water and take small portion of the paste in hand and press it little. Then make the hole in the centre. Drop this vada into hot oil.
You can do this by using big spoon as well. 
Take the small batter , make it in round shape. Put it on the back side of your spoon and then press little and make the small hole. Drop the vada in oil.
Fry the vada from both sides till it becomes golden brown.
Drain the oil and take them out on oil absorbent paper.
Your delicious crispy medu vada.
You can also serve this on bnana leave also.
Serve it with sambar, Coconut and peanut chutney. Enjoy!

Note:

After beating the batter for around 10 minutes, you can check if it has become light or not.
Take small portion and drop it in the water if the batter becomes light then it will float on the water.
While grinding if you add too much water then medu vada will absorb too much oil while frying.
Adding onion in the batter is optional.
