Chirote
Ingredients:
2 cups- All purpose flour
2tbsp- Oil
Water for kneeding the dough
2 cups- Sugar
1 cup- Water for sugar syrup
Saffron
Corn flour
Oil for frying
Salt as per taste
Method:
Take the all purpose flour in a mixing bowl, add salt and oil.
Mix this well.
Add water to it and kneed it into dough.
The dough should not be too soft or too hard.
Let this dough rest for 10-15 minutes.
Kneed the dough once again and make small balls of the dough of equal size.
Roll the dough balls into a shape of roti.
Fold the roti into a handkerschief fold and keep it aside(this retains the moisture of the dough)
Repeat this for remaining dough balls.
Take such three folded rotis and open the folds.
Take a roti and apply oil to its one side and sprinkle some corn flour on it and add the next layer or roti on it.
Apply oil and corn flour on the second layer also and put the third roti on it and apply the same to it.
Make a proper roll of these layers.
Cut the roll into small pieces.
Press the roll with your thumb and then roll it like this.
Repeat this for the remaining dough.
For frying:
Heat the oil in the frying pan.
Once the oil is heated, add the chirote and fry it on medium heat.
Remove once it is fried and place it on a tissue to remove the excess of oil.
For making the sugar syrup:
Add the sugar in the water and heat it.
Add 1-2 drops of lemon juice and a pinch of saffron.
Boil this syrup till it gets a bit thick.
Add the fried chirote immediately to this and remove it after a few seconds or it will become soft.
